I know what you're thinking. These cannot be ingredients for chocolate pudding...or at least for tasty chocolate pudding.

I wanted to make a dessert for my mother which is easier said than done. She's currently grain, fruit, and sugar-free. That sure narrows down the options! Happily, I came upon this recipe from this blog.
Here's all you need to make some amazingly gooey and yummy pudding:
2 avocados, peeled and smashed
1/4 cup coconut oil
2 ounces unsweetened chocolate
1/3 cup raw honey
1 tablespoon vanilla
a pinch of sea salt
Chop and melt the chocolate. It's also a good idea to warm up the coconut oil just a little so that it blends more easily. I put it in the microwave for ten seconds.
Throw all the ingredients into a blender and let it whirl!
If your diet permits, it's really good with whipped cream on top...
This is something that will be enjoyed by grain and sugar-eaters alike. My whole family loved it-especially my mom who hadn't had any dessert in weeks!
